Good and pure saffron can be distinguished by its color and odor. The color of premium saffron is orange-red yellow. In addition, saffron has a very pleasant and penetrating odor so that the more the smell of saffron, the newer it is. It must be remembered that the low odor indicates that the saffron is outdated or not pure.  The taste and color of saffron depends on the type of saffron.  The thicker the saffron in the food, the color becomes bold yellow, golden yellow or red. The thinner it is, the less its color. If the saffron is fresh and away from heat, sunlight and moisture in closed glass containers in good conditions and is ecologically suitable for climatic conditions, it will taste better.

Kashmiri Saffron

Kashmir is known as the Valley of Flowers. Among the various crops in this region, saffron has a special place in terms of importance and application. Saffron is grown in two areas of Kashmir. One of these two areas is known as Pompur.  This region has a worldwide reputation for saffron cultivation. For this reason it is called the saffron city of Kashmir. This green city is considered as an excellent and pleasant environment for saffron cultivation. The characteristics of Kashmiri saffron include the long, thick stigma. These strands are dark red. Soil quality, good climate are major factors for the large size of saffron strands in these areas. Mongra Saffron and Yellow Saffron Cashmere saffron with a pleasant aroma and taste different from important products in the kitchen.  While Iran holds about 70 percent of the world's saffron production, some believe that Kashmiri saffron has the highest quality globally. While saffron is cultivated in limited areas other than Iran, there is no competitor for Iranian saffron in terms of taste, color and quality.

Saffron greenhouse cultivation

China is currently hurting the Iranian saffron market in two ways. one by cultivating saffron as a "greenhouse" and the other by selling "counterfeit and poor quality saffron" under the name Iranian saffron. Given the increased greenhouse cultivation of saffron and the greater profitability of cultivating this crop compared to traditional methods, a large proportion of Chinese businessmen have also expressed a desire to invest and harvest the crop. Orumchi Province and the city of 'Xin Jian' is one of the cities where saffron is now cultivated. But besides the two cities, saffron is also cultivated in the cities of Zhejiang and Henan, In Zhejiang city, saffron is poorly produced due to poor soil and onion, and in Henan due to cold weather, saffron growth is very low and frozen in the open air. Although it is planted and sold in China, it cannot compete with Iranian saffron and most of the climate in China is not suitable for cultivation. Chinese saffron cultivars appear larger and taller than Iranian saffron ,  But it does not have the quality of saffron in Iran  and the interesting thing is that Chinese saffron is more expensive than Iranian saffron  and most Chinese traders in western China in the Xinjiang and Urumqi regions are more involved in the saffron trade.

Afghan saffron

Afghanistan has good climate for better cultivation of saffron  and according to estimates, if this industrial plant is properly planted, its yields will increase threefold over other countries. Saffron is referred to as agricultural gold. It is said that each kilo of saffron is sold in Herat province for about 2 to 6,000 Afghanis. Global price for one kilogram of Afghan saffron is $ 2,000 and demand for this saffron is on the increase in world markets. Brussels-based World Institute of Taste and Quality has announced that your Afghan saffron is the best and highest quality saffron in the world. Afghanistan has no tariff barrier on exporting saffron to the US, India and China and has gained a lot of support in the short term. For three consecutive seasons the world's best saffron has been recognized for quality and has outperformed some rivals such as Spain and Iran. So that  In March 2019, the United Arab Emirates called for the purchase of all Afghan saffron products in the near future.
